Champagne Brut Vintage represents the history of Dom Pérignon and its fame is spread throughout the world. This wine is dedicated to the Benedictine monk of the Abbey of Hautvillers who lived in the 17th century and who contributed to the qualitative growth of viticulture in the Champagne region.

Dom Pérignon was one of the first prestige cuvées in the history of Champagne, born from the idea of ​​the English advertiser Laurence Venn, employed by the Simon Bros. & Co. agency, the English importer of Moët & Chandon, who imagined creating a very high quality Champagne to be sold on allocation to the British aristocracy.

It is produced with the best Pinot Noir and Chardonnay grapes, ripened during a single year and harvested towards the end of September. The vinification takes place according to the Classic Method, with refermentation in the bottle. The wine is then aged on the lees for at least 8 years, until the moment deemed appropriate by the Chef de Cave.

In the Champagne region, 2012 was a hot and dry year, which eliminated any concerns about the ripening of the grapes, favoring the ideal ripening of the bunches. The harvest began in the central weeks of September, depending on the plots.

Chef de Cave Vincent Chaperon describes it as follows: “2012, more than any other vintage, reveals the uniqueness of Dom Pérignon’s creative approach and art of blending.” The nose is rich and varied, combining floral and fruity notes, followed by vegetal and mineral notes. The bouquet reveals white flowers and sweet apricot, then lands on the freshness of rhubarb and mint, and the minerality of ash. The sip is energetic and lively with a finish that converges on acidic and bitter notes, characterized by ginger, tobacco and toasted aromas.
